Pitt Business Culinary Management Certificate

The Pitt Business Culinary Management Certificate provides University of Pittsburgh students with a unique pathway to gain a broad overview of core business functions through structured coursework and to engage in a deep exploration of specific aspects of the culinary arts.

The Pitt Business Culinary Management Certificate, is 18 credits. Nine credits of business courses will be offered by Pitt Business to Pitt students. Similarly, nine credits of culinary arts courses will be offered by CCAC. Students pursuing the Culinary Management Certificate at Pitt will have the opportunity to choose either the business management or entrepreneurship track upon entering the program as well as the meat/seafood or baking/pastry option.

Accordingly, students have four options in the culinary management certificate:

  • Business Management and Meat/Seafood
  • Business Management and Baking/Pastry
  • Entrepreneurship and Meat/Seafood
  • Entrepreneurship and Baking/Pastry

Required Courses for Business Management Track (Non-Business Students)


Non - Pitt Business Students pursuing the Pitt Business Culinary Management Certificate will be required to take one required course and two elective courses from a list of seven options.  In the Business Management Track there is one (1) required course.

Elective Courses for Business Management Track (Non-Business)


Non-Pitt Business students in the Business Management Track of the Pitt Business Culinary Management Certificate will take two (2) elective courses from a list of seven (7) options.

Required Courses for Entrepreneurship Track (Non-Business Students)


Non - Pitt Business Students pursuing the Pitt Business Culinary Management Certificate will be required to take one required course and two elective courses from a list of eight options.  In the Entrepreneurship Track there is one (1) required course.

Elective Courses for Entrepreneurship Track Non-Business Students)


Non-Pitt Business students in the Entrepreneurship Track of the Pitt Business Culinary Management Certificate will take two (2) elective courses from a list of eight (8) options.

Required Courses for Culinary Arts Track (Non-Business and Pitt Business Students)


Students (Pitt Business and Non-Business students) pursuing the Culinary Arts Track in the Pitt Business Culinary Management Certificate will be required to take two (2) courses.

 

  • CLR 100 - INTRODUCTION TO FOOD SERVICE
  • CLR 110 - FOOD SERVICE SANITATION AND SAFETY

Elective Courses for Culinary Arts Track (Non-Business and Pitt Business Students)


Students pursuing the Culinary Arts Track in the Pitt Business Culinary Management Certificate choose one (1) of three (3) elective courses.

 

  • CLR 117 - FUNDAMENTALS OF CULINARY SKILLS
  • CLR 118 - MEAT AND SEAFOOD FABRICATION AND COOKING
  • CLR 211 - MENU DESIGN

Required Courses for Baking/Pastry Track (Non-Business and Pitt Business Students)


Students pursuing the Baking/Pastry Track in the Pitt Business Culinary Management Certificate will be required to take two (2) courses.

 

  • CLR 100 - INTRODUCTION TO FOOD SERVICE
  • CLR 130 - FUNDAMENTALS OF BAKING SKILLS

Elective Courses for Baking/Pastry Track (Non-Business and Pitt Business Students)


Students pursuing the Baking/Pastry Track in the Pitt Business Culinary Management Certificate will be required to take one (1) of four (4) courses.

 

  • CLR 135 - QUICK BREADS AND COOKIES
  • CLR 140 - PIES, TARTS AND PASTRIES
  • CLR 235 - CHOCOLATE, CONFECTIONS AND DESSERTS
  • CLR 245 - CAKES AND TORTES

Required Courses for Business Management or Entrepreneurship Track (Pitt Business Students)


Pitt Business Students pursuing the Business Management or Entrepreneurship Track in the Pitt Business Culinary Management Certificate will be required to take one (1) course.

Elective Courses for Business Management or Entrepreneurship Track (Pitt Business Students)


Pitt Business students pursuing the Business Management or Entrepreneurship  Tracks in the Pitt Business Culinary Management Certificate will be required to take two (2) courses from nine (9) options provided.
